It seems that most people don't collect banknotes but I don't understand why not, luckily some of us do so here's my stats:
I have 400+ banknotes in my collection and more coming soon
largest in face value: 100 000 000 000 000
largest in size: 275mm x 127mm
smallest in size: 27.5mm x 38mm
oldest: 1792
not sure how many countries but I will count them when I have time
I only have 47 banknotes from 13 countries, in many cases just one or two notes per country. Those with several include mainly Germany and China.
I would say about half are old (WWII or earlier) and half modern/current, the newer ones being mostly for the novelty factor (e.g., Zimbabwe's hyperinflation notes, dead dictators, funny looking people on notes, lol).
By the way, quick (and possibly odd!) storage question:
I just received some Leuchtturm pages for banknotes and am wondering whether you're supposed to use the page pockets as they are, or are you supposed to put the notes in plastic sleeves first? Like with coins and 2x2 coin holders. I'm guessing you don't need to with notes?
I don't collect them (yet). I have a few.
* Full set of Estonian pre-euro kroon.
1991-2010
*a random 1 dollar and 5 dollar note from USA.
*2 random Polish notes from 1940's
*1 leu ( I think it was leu or lei) from Romania, recent year.
I think that is all.
So by no means a Rockefeller
I don't collect notes because choosing from two, I like coins more and my coincollection still needs a lot of work trying to Organise it. Time and money are the two I'm lacking.

It would be nice to find time to organize them one day, provided there is a good site which helps to do so...
It is an area of collection, I need to focus on, after I manage to organize my coins neatly....
For the moment, I have 285 banknotes in my collection. The majority is from Yugoslavia, those are easiest to get hold on!
For now my collection doesn't consist of very rare notes, but I will add 3 emergency banknotes from Slovenia and Croatia (1919) soon, pictures will follow!
I started this new collection just a few months ago, got a little bored of all the modern coins, so I think this is a nice way to learn some new things about the countries I have coins from!

I am kind of an anti-colnect guy, as I did not find it proper for coins, but I'll check it for banknotes.
The fact is that I am not very motivated to organize my banknotes now.
It is a result of 30 years of hoarding, so I guess it could wait till I retire or so...
EDIT: I just clicked to see that they have 4100 German banknotes, so yes, maybe it shall be my game ... later

You can't imagine how much euro banknotes we can save, between different ECB president signatures, different country codes (and not for me, printer codes)... and new Europa series with new printer codes (instead of country codes, but with equivalences)...
But another funny note: "Eine krone Oesterreichich-ungarishe Bank 1922"... printed after Austrian-Hungarian EMpire split due to their defeat in WWI

I have of those too, mine's a 1,000 Kronen banknote from 1919. It says its also printed on behalf of the Austrian-Hungarian Bank in 1902, but it was actually printed in 1919 with a stamp "DEUTSCHOSTERREICH" to let people know they were meant to circulate in the recently formed Republic of German-Austria. It's funny how they kept changing the design of the notes but never removed the words "Oesterreich-Ungarische Bank" from them.

I collect also banknotes and coins.
I have more than 800 notes of about 180 countries (20 missing and difficult to find at a reasonable cost). And also 65 to exchange of various countries and condition.
Very interesting from a point de vue history and geography, and often very nice engravings.
