I have an old penny (18th century) with the countermark H Meadows, yet I simply cannot find any literature on what this countermark is or anything about H Meadows. Any info would be hugely appreciated.

I have the "bible" in this field: Greg Brunk's Merchant and Privately Countermarked Coins (2003). Your countermark is not listed by him. The list of names is on-line. Follow this link for names starting with "M".
It is quite common for a countermark not to have been listed in Brunk. Obviously, thousands of people punched their name on coins, so much so that a law was passed in the 1850s in your country to prohibit the countermarking of English coins. It would be great, though, if you could post a picture. The style of the letters may help to identify the period when the C/M was punched.

Unfortunately, I wasn't able to find more. In Brunk (a political science prof who wrote 4 books on countermarked coins) most countermarks cannot be attributed to anyone with certainty. Sometimes, he can only say that someone is possibly or probably the same as the countermarker. In your case, the name seems too common to allow for identification, especially that we only have the initial H for the first name.
I have a nice C/M on a British 1860s penny that I posted almost a year ago. Even though I have both first and family names in full, THOMAS PETERS, I couldn't find who he was because there are too many Thomas Peters. I also posted on March 2 a Canadian cent with the rare name J MALLALY, but even in this case I am not sure yet who he was, and I may never find out. By the way, the lettering style looks like yours, but that has to be a coincidence.
With a little luck, some other Numista member has the same as yours, or else some day someone will Google the name and hit this page... If I find something else, I'll let you know.
