There's a money to be made out there if someone can come up with a one-click application/gadget to
1) Take high quality / resolution images of both sides of a coin
2) Format and save those images into a single image or other user selectable format
I realize that different coins require different lighting etc but this dream gadget figures that out. Whenever I've tried taking an image it takes way too long and way too much effort to get it right.
Don't know if I understand well. You need an application to make a single image from two separate pictures of a coins? You have the pictures or the application has to take the pictures? On what device it's suppose to run the application? Some more details would help.

This would probably be most useful for a smartphone platform. Essentially I want to reduce the steps required to take and post pictures of coins.
Currently the process is something like
1 Take a pic of the the obv
2 Adjust lighting, repeat 1 and 2 several times
3 save image
4 repeat 1 thru 4 for reverse
5 open Photoshop or other
6 load images
7 crop images
8 adjust size
9 merge the two images side by side (optional)
10 save the merged images
Any technique or device or app that can optimize that process would help tremendously

It shouldn't be a problem for any Android/iOS developer to build such an application, maybe the hard part would be to develop an algorithm to enhance the light to be on your taste. Seems to be such a subjective thing. Anyway, for a developer it would be a challenge to build an AI algorithm even for this.
There's an app called cropcircle I use. So I take the picture on my iPhone, adjust the exposure to show the coin in the best light. Edit if need be you can change the white balance later. Then into crop circle. Another 3rd party app of gifmaker.me to make it turn obverse reverse or you could get a collage app to have a stationary image.

I just work with pics in the computer, and there I use Photoshop.
Not so easy on your smartphone though. I very rarely use my laptop for web browsing. In fact I only use it for Lightroom & photoshop on my other photos, no time to upload Coin images.

what's not easy? making a collage? you simply choose 2 or more photos in you gallery, go to settings and choose collage..it can't be more simple, mate..
