I've read about some coins being described but none ever being found, I can't name any off the top of my head, but with banknotes this is actually quite common.
In the HRE there were some years coins were minted and smelted to make new ones (with less silver content of course) up to twice a year. I can imagine that a number of coins with small mintages and not a far reach (many local coins didn't travel further than 50km) didn' survive to even be recorded.
Actually Finland possibly has extinct coins. https://en.numista.com/catalogue/pieces91953.html
This coin was found in the Hämeenlinna castle. Agricola, the person who translated the bible into Finnish and finally created the language, notes in the bible that the roman coins were worth as much as "5 6 penningars" OR "30 little pennings" which makes me wonder if a "1 penning" coin has existed. We never know about these, the unfound coins could be in someones closet, a medieval castles ruins, or just somewhere under the dirt.
